Our grapes
Our premium grapes are selected from Napa and Suisun Valley. Our proprietor, Patrick Borelli believes that good wine begins with selecting proper grapes. Patrick visits vineyards he purchases grapes from to ensure the highest quality of grapes and to foster relationships with these vineyards for continued quality.

Fermentation
During the fermentation process, we add yeast to our red and white wines while the sugar of the grapes converts into alcohol. We use the best techniques and technologies during the fermentation method.

Crushing Grapes
Once we have chosen the perfect grapes for our premium wine, we begin the crushing process of those grapes. With traditional methods mixed with contemporary techniques, our crushing method ensures our grapes are ready for fermentation.

Aging
We take care during the aging process. Each wine has its own unique qualities for the perfect aging process, so we use proven methods for each of our wine varietals. We age our wines for an ideal level of time before bottling.
